Surprisingly Kaylee was born with no curl to her hair and it was really dark. Over time it started to get curly on top and then all over. For a few months she had a fo-hawk and then it started to grown on the sides.
So here is the evolution of her magnificent NATURAL curls:
LOVE this little girl to pieces!!!
Happy Friday!
Ingredients
- 2 15-ounce cans black beans, rinsed
- 1 teaspoon ground cumin
- 1 cup frozen corn kernels, thawed
- 1/4 cup plus 1/3 cup plain dry breadcrumbs, divided
- 2 cups finely chopped tomatoes
- 2 scallions, sliced
- 1/4 cup chopped fresh cilantro
- 1 teaspoon chili powder, hot if desired, divided
- 1/4 teaspoon salt
- 1 tablespoon extra-virgin olive oil
- 1 avocado, diced
- Preheat oven to 425°F. Coat a baking sheet with cooking spray.
- Mash black beans and cumin with a fork in a large bowl until no whole beans remain. Stir in corn and 1/4 cup breadcrumbs. Combine tomatoes, scallions, cilantro, 1/2 teaspoon chili powder and salt in a medium bowl. Stir 1 cup of the tomato mixture into the black bean mixture.
- Mix the remaining 1/3 cup breadcrumbs, oil and the remaining 1/2 teaspoon chili powder in a small bowl until the breadcrumbs are coated with oil. Divide the bean mixture into 8 scant 1/2-cup balls. Lightly press each bean ball into the breadcrumb mixture, turning to coat. Place on the prepared baking sheet.
- Bake the croquettes until heated through and the breadcrumbs are golden brown, about 20 minutes. Stir avocado into the remaining tomato mixture. Serve the salsa with the croquettes.
I also added a little Tapatio to give it a bit more flavor.
The best part of this recipe.....
SHE LOVED IT!!!

Sunny enough to put some shades on. Heading to Trystan's 6th Birthday party and rockin out to the Hey Hey song.
We decided to head to one of the coolest places in the city
Seattle Pacific Science Center
They were hosting a huge Harry Potter Exhibit so we thought why not...
little did we know MLK day meant that everyone and their mom wanted to see this exhibit too. All times were sold out. Booo......
We still made a day of it inside the museum :)
Dinosaur World
Have I mentioned before that Kaylee LOVES dinosaurs. She was having a blast roaring back at them.
I had so much fun teaching her the different names and listening to her attempt to say them back to me.
Bug Land
Ewww....
That's what Kaylee said the entire time we were in this area. I don't think bugs are going to be her thing but I am A OKAY with that choice. I am NOT a bug person!
Butterfly Exhibit
Isaiah did a great job on camera duty!
Funny Mirrors
We had a great time playing around with all of the mirrors.
I think Kaylee is a little TOO into looking at herself already. I think its a girl thing...
And that's when the camera battery died. haha
After funny mirrors we saw trains and snakes and did a fun body function exhibit.
At the end of the night I started to get teary eyed looking back at the pictures on the computer. My little girl is so big now. She is really a little person. She is learning something new everyday and growing like a weed. Her hair is getting longer and curlier and her little voice is just the cutest thing. My baby isn't a baby anymore and it is really bitter sweet.
I can't wait for all of the fun family adventures in our future.
Washington 2009:
Today I did what every little girl dreams about....
I bought my wedding dress!
This day is going to be amazing.
I am so blessed to have such supportive parents who even though they aren't able to be a part of this day still are so loving and supportive it brings tears to my eyes.
Buying a wedding dress really is like you see on "Say Yes to the Dress." I have always watched that show and yelled at the TV saying "Pick that one....its a no brainer" but wow was I wrong. It is SOOOO hard to narrow down to just ONE dress.
I did a good job in know what I liked but once I narrowed it down to two I was so overwhelmed. I loved them both equally.
But I had a good honest friend there with me who let me choose. It was great!
I left the dress shop with something I thought I would NEVER like and low and behold I fell in love with it immediately!
I have to say I really do feel like a bride now. I am not ashamed to be wearing this dress. I am so blessed that on my 5th wedding anniversary my family to going to be sealed in this temple together forever.
Words cannot express the love in my heart right now
ps.... we were totally safe when I took this picture. We were sitting at a stoplight. The truck in front of us decided to try and come into our lane at the last time so me being the nice driver waved him over.... so don't freak out MOM!! :)
The best part about the snow today....
Forcast called for partly sunny with no rain until later this week....
Man I love the weather man!
